I’ve tried a couple of chilli sauce recipes over the last few months. The first one I made had the look and feel of untreated slurry with virtually no flavour at all, and the other had the colour and consistency of spring water matched with the power and venom of a chemical weapon. It’s been a disappointing time at Lazer Horse HQ.
Last week I decided to stick to the basics. No pomp and ceremony, just the bare minimum. It worked out a treat and it was well easy so I thought I’d share it here in case someone else was also getting tired of sucking at making chilli sauce.
Chop up the onion(s) and chillis
Bung them all in a saucepan with a bit of oil and fry for a couple of minutes
Add the vinegar, water, salt and sugar
Cook for about 30 minutes on a low heat (don’t let it boil like a nutter)
Blend it until it looks like tomato soup and bottle. The picture below shows how much sauce you’ll get from this recipe. Notice I’m using a Zanussi cooker here, but feel free to use whichever cooker you currently have installed at your residence.
As you can see it looks a lot like Heinz tomato soup. There’s plenty of good jokes to be had with that. Although this sauce isn’t the hottest on earth, if you banged down a whole tablespoons worth thinking it was tomato soup you would be in for a bit of a surprise.

Basically anything savoury will work a treat. That’s the wonder of this recipe, it’s super tasty. It’s spicy too of course, but it’s not so killer that you can’t enjoy it. Also it freezes well so that’s a bonus.
