QUICK RECIPE: Super Simple Chilli Sauce
I’ve tried a couple of chilli sauce recipes over the last few months. The first one I made had the look and feel of untreated slurry with virtually no flavour at all, and the other had the colour and consistency of spring water matched with the power and venom of a chemical weapon. It’s been a disappointing time at Lazer Horse HQ.
Last week I decided to stick to the basics. No pomp and ceremony, just the bare minimum. It worked out a treat and it was well easy so I thought I’d share it here in case someone else was also getting tired of sucking at making chilli sauce.
Ingredients
- 20(ish) x fresh Dutch Chillis – or any type of chilli you like really, jalapenos would work well.
- 1 x fat red onion – the onion doesn’t have to be red by the way, and if you don’t have 1 fat onion feel free to use 2 small ones or 3 really small ones, it doesn’t matter. In fact you could use 4 massive onions or zilch onions and it would probably turn out OK. What I’m trying to say is that the onion quantity is not paramount.
- 100 ml red wine vinegar – I only used red wine vinegar because I’d run out of white distilled vinegar, use either, I don’t think it matters too much, vinegar is vinegar at the end of the day.
- 200 ml water – or more if you want it runnier, or vice versa, don’t overdo the water though, you can add it in later if needed
- 1 x Tea spoonful salt – or thereabouts
- 1 x Table spoonful sugar – or thereabouts
Instructions
Chop up the onion(s) and chillis
Bung them all in a saucepan with a bit of oil and fry for a couple of minutes
Add the vinegar, water, salt and sugar
Cook for about 30 minutes on a low heat (don’t let it boil like a nutter)
Blend it until it looks like tomato soup and bottle. The picture below shows how much sauce you’ll get from this recipe. Notice I’m using a Zanussi cooker here, but feel free to use whichever cooker you currently have installed at your residence.
As you can see it looks a lot like Heinz tomato soup. There’s plenty of good jokes to be had with that. Although this sauce isn’t the hottest on earth, if you banged down a whole tablespoons worth thinking it was tomato soup you would be in for a bit of a surprise.
Serving Suggestions
Smash it on an egg sarnie
Burgers obvs
Pizza dip
Any sandwich ever made
Basically anything savoury will work a treat. That’s the wonder of this recipe, it’s super tasty. It’s spicy too of course, but it’s not so killer that you can’t enjoy it. Also it freezes well so that’s a bonus.
